Sernik - Polish Cheesecake

An easy cheesecake containing curd (farmer's cheese).

This is an easy cheesecake I make when I have too much curd (or just feel like making more refreshing treat).

Ingredients
Crust
- 500g flour
- 100g cup sugar
- 3/4 tsp baking powder
- 175g butter
- 1 egg (or 2 large egg yolks)
- 3tbsp greek yogurt
- additional flour for dusting / thickening if needed
Filling
- 1kg curd (farmer’s cheese)
- 5 large eggs (or 4 large eggs and 2 egg whites)
- 300g sugar
- Vanilla flavour
Decorations (optional)
- Gelatin
- Fruit
- Whipped Cream
Process
- Preheat the oven to 170°C.
- First, prepare the crust. Start by warming the butter to room temperature and mixing it with eggs and sugar.
- Add the rest of the ingredients and mix thoroughly.
- Let it rest in the fridge for a few minutes. When the dough is at room temperature, it’s hard to work with.
- Dust your work surface and roll out the dough. Line your baking dish with it.
- In a separate bowl, mix your filling until smooth, then pour it into the dish lined with dough.
- Bake in the oven until it starts turning golden.
- Take it out and let it chill.
- Decorate the chilled cake as desired.
Notes
- You may have leftover crust dough. I like to roll it out and cut out cookies.
