Sernik - Polish Cheesecake

An easy cheesecake containing curd (farmer's cheese).

This is an easy cheesecake I make when I have too much curd (or just feel like making more refreshing treat).

Ingredients

Crust

  • 500g flour
  • 100g cup sugar
  • 3/4 tsp baking powder
  • 175g butter
  • 1 egg (or 2 large egg yolks)
  • 3tbsp greek yogurt
  • additional flour for dusting / thickening if needed

Filling

  • 1kg curd (farmer’s cheese)
  • 5 large eggs (or 4 large eggs and 2 egg whites)
  • 300g sugar
  • Vanilla flavour

Decorations (optional)

  • Gelatin
  • Fruit
  • Whipped Cream

Process

  1. Preheat the oven to 170°C.
  2. First, prepare the crust. Start by warming the butter to room temperature and mixing it with eggs and sugar.
  3. Add the rest of the ingredients and mix thoroughly.
  4. Let it rest in the fridge for a few minutes. When the dough is at room temperature, it’s hard to work with.
  5. Dust your work surface and roll out the dough. Line your baking dish with it.
  6. In a separate bowl, mix your filling until smooth, then pour it into the dish lined with dough.
  7. Bake in the oven until it starts turning golden.
  8. Take it out and let it chill.
  9. Decorate the chilled cake as desired.

Notes

  • You may have leftover crust dough. I like to roll it out and cut out cookies.
