Zserbo and the Yolk cake
Two interesting walnut recipes for the December Book Club at Guild Hall.

Zserbo
Ingredients
- 500 g flour
- 25 g fresh yeast
- 250 g butter
- 1 egg
- 2 egg yolks
- 100 ml milk
- 1 tbsp sugar
- ½ tsp lemon zest
- pinch of salt
- 150 g ground walnuts
- 400 g jam
- 50 g sugar
Process
- Preheat the oven to 180°C.
- Warm the milk to lukewarm temperature, then add yeast and sugar. Let it rise a bit.
- Mix flour and cubed butter, then add eggs.
- Combine the milk with the flour mixture and knead them together. Add the salt and zest.
- Divide the dough into 4 parts and roll them out flat.
- Mix sugar and walnuts.
- Put first layer into the pan, spread a third of jam and a third of walnut mixture over it.
- Continue layering the cake, finishing with a dough layer.
- Bake until golden.
- Let it cool, then decorate with melted chocolate.
Egg Yolk Cake
Ingredients
- 140 g flour
- 250 g butter
- 270 g sugar
- 270 g ground walnuts
- 6 egg whites
- ½ tsp baking powder
- 300 g powder sugar and 6 egg yolks for the top
Process
- Preheat the oven to 170°C.
- Whip out the egg whites until stiff. In a separate bowl mix butter, flour, sugar, baking powder and walnuts, then fold the egg whites.
- Pour the batter into pan and bake until golden.
- While the cake is baking, mix yolks and powdered sugar until smooth.
- Take cake out of the oven, and spread the egg yolk mixture on top, evenly. Let it dry.
- Cut and enjoy.
