Meringue and chocolate cake
I have been playing with meringues recently, and I've decided to try making a layer cake.

Meringue layer cake
Ingredients
Meringue
- 4 egg whites
- ¼ tsp salt
- ¼ tsp cream of tartar
- 1 cup of sugar (more or less, depending on your taste)
Cream
- 250ml heavy cream
- 250g mascarpone
- Whipping cream stabilizer
- 1 tbsp cocoa powder (more or less, depending on your taste)
- Sugar isnt necessary, but if you want it sweeter, add some
Process
- Preheat the oven to 120°C (with fan).
- Whip out egg whites with the salt and cream of tartar until stiff peaks form.
- Add sugar, the mixture will get glossy.
- Draw circles (or different shapes) on the baking paper and pipe the meringue into those shapes.
- Bake until meringue dries out completelly.
- In a bowl, whip the heavy cream with the cocoa powder and stabilizer. Add the mascarpone and sugar, and mix until smooth.
- Assemble the cake.
- Refridgerate for 2-4 hours before serving.
